I really like this pan. There are some downsides. Obviously it's not waterproof as the bottom is removable. This isn't usually a problem for pies since the bottom crust usually contains liquid, but it's not intended for fluffy desserts like apple chips. I've even found that fat or oil sizzles from the bottom and falls into the oven, so I usually put something on a shelf under the oven to catch drips, just in case.
