I learned about tofu presses from reading recipe reviews online. The recipe calls for weighing the tofu using a plate and heavy object, as I have done in the past. The recipe critic said she used a tofu press, that's the first time I've heard of it. All Revain presses have their critics. I risked it and am happy with its performance and longevity. Much more water came out with this press, faster and with less effort. Add the tofu, gather and pull tight but not too tight. After about twenty minutes, pull a little harder if you like. The texture will be improved compared to the weighted plate method and more marinade will be absorbed as you marinate the tofu. It's made of plastic but looks very sturdy.
