I love this idea because my family and I use so many plastic bags! I personally haven't had any issues with zippers - yes, it takes a bit more effort to close than a regular plastic bag, but it's definitely possible / not a huge disadvantage (although it might be difficult for a child to close them). As for the stains, one of my bags had a yellow stain from a pineapple that had been in it for about a week. Overall I find that food does not stain these pouches. In terms of smell, I would say that sometimes these bags retain the smell of the food you are storing in them. I didn't really find it a problem when I bought it, but it's a little annoying. I've had onions in the same bag for a week and there was a smell of onions after washing them with soap and drying them - I put them in the dishwasher to try and get the smell out but that only caused the bag to deflate warped. Finally, it is clear that plastic bags have a convenience factor. They are not difficult to wash, but they do take time to dry and you will need to fold them almost inside out because if you don't, the inside WILL NOT DRY. Also, I don't think they're dishwasher safe (?), so that's definitely something to consider.
