If you don't thoroughly remove plaque with regular brushing and flossing, that plaque creates bacteria that irritate the lining of your gums. Because of this, people often bleed when they first start flossing regularly. In this case, the soft, thin bristles can irritate already inflamed gums as they remove plaque and tartar from long-standing cracks.
