I'm new to canning and have watched a lot of canning videos. Finally I knew 1. I needed an autoclave2. I cannot work with a pressure autoclave. I started with Instant Pot Max but quickly realized it wasn't going to work. Only 4 glasses at a time! So I bought a Presto 23 Quartz and watched it for about 2 weeks. Two days ago I turned it on with just water and the process was nerve wracking, having to constantly fiddle with the dial on my electric stove to keep the pressure at 10! I ordered a jiggler last night and canned 18 pints of beans! I could listen to the sound of the jiggler to know he was keeping the pressure up. I would check every 15 minutes or so. At 12 it was possible but stayed there. I'm so glad I have this little piece that makes a big difference!
