Fiction! The best in kitchen and dining room

I love my dishes. I recently made my first batch of sauerkraut and it was divine! Now I'm starting the seventh batch. I used an old Tupperware lid, specifically the D-size canister lid you can find on ebay (made in the USA - food grade plastic) and cut it to fit a jar to hold the veggies . I put a large marinade glass filled with water on top of it. That works great. My friend uses a gallon size freezer bag filled with water to weigh down the cabbage and it seems to work really well. At a one gallon size, I've found that if the cabbage is the size of a head of iceberg lettuce, you'll get 3. If it's the size of a large grapefruit, get 4. I was at my nearest grocery store (Cash & Carry) and bought 5 - a pound bag of coleslaw. I've noticed that some small ethnic grocers (Mexican, Ukrainian, etc.) sell shredded cabbage in 5lb boxes. Pocket. I use 3 tbsp. Kosher salt for my 5 pounds. cabbage. I work in thirds. A third of my cabbage and 1 tbsp. Salt. I put it in a bowl and start massaging. It seems to take me about 10 minutes to get enough liquid to cover the cabbage. (I do this while watching TV) Massage the next two thirds, pour everything into this beautiful jug, put on the Tupperware cut lid, place a glass filled with water on top and cover with a cloth. Clean the flowers every few days. In a week you will have wonderful sauerkraut. Cancer fighting, probiotic delicious. Don't be afraid to do it. It's really easy! Have fun eating healthy!
