I love this butcher paper. It's a huge roll and works great! I give each side of the tritype directly over the hot coals for about 15 minutes, then move it to the other side of the grill and let it cook at 250 degrees for about 1 more hour. At this point I wrap it snugly in butcher paper and put it back on the 250 indirect heat grill for another 1.5 to 2.5 hours. Honestly it's so delicious I think the longer it cooks the better! Butcher paper keeps the moisture in and my wife loves that her triple tip is well done so I'm not worried about it coming out good/well done. The butcher paper still lets the smoke through, you get delicious flavors from the smoke too! I highly recommend.
