They do EXACTLY what they say. They are VERY easy to fold - either interleaved (pointing in one direction) or with water (pointing in different directions). Tip: If they don't fit the way you expect, turn ONE inside out. Circles together become tightly nested. As for the ice trays to actually make ice cream, OH MY YES. You don't get fancy balls or cubes for "nice" drinks, but ice that works well. Fill them to the first obvious indentation in the wells. Put in the freezer. Wait. to win. Get ready and turn around. Half of the cubes literally fall out of the shell, you don't have to rotate them. A very (VERY) little twist or shake of those VERY thick plastic trays and everything else comes out. The only complaint I have is that the cube from the "lower" compartment can get stuck to the bottom of the "upper" compartment when exiting. Can be washed in the dishwasher. I bought my pair for less than the Jeffersons but I would almost say they are worth a Lincoln Plus for the pair they sell when I was writing the review.
