Sharpening cutting tools takes practice and, like the tools themselves, requires quality sharpening equipment. My hand isn't as good as it used to be, so I've used the Lansky sharpening system to set consistent angles on my blades, but it's not that much. The leather strap for finishing the blade is of great importance. After losing all my tools in a fire, I had to start over. I got the Lansky system back but had to replace my old leather strap. I choose a one-sided band of Hutsul leather. Among other things, I recently bought a really nice set of kitchen knives. These aren't the professional cutting tools some get when a single chef's knife can cost $300 or more, but I still paid about $400 to build an all-purpose set of seven knives plus steel. But like all good knives, they needed to be sharpened when they arrived. One of the knives was an identical replacement for a Santoku vegetable cutter. After a good sharpening, I sharpened the blade with a Hutsul leather strap and green compound. Although I didn't want to try shaving with it, I managed to get a small amount of hair off my arms when I was done. a little olive oil as recommended in the instructions, after the first few movements the composition will be sufficiently distributed. I sharpened the whole set of knives and sharpened with a Hutsul belt, everything is the same and I will say they are as sharp or sharper than any such knife I have ever used. How sharp? I've been married for 50 years. My wife has always been afraid to use my sharp pocket knives and lately she's been afraid of my paring knife. Now, with all the new knives in the kitchen, she needed to overcome her fears and learn how to use these new, very sharp knives. I told her about sharpness and dullness and less effort to create control: That was lesson #1, "Let the tool do the work." I told her about the first three or four times she used freshly sharpened knives, about hand and finger placement, proper lighting, choosing the right tool for the job, and so on. Now she uses knives regularly and no blood has been shed, which I can't say about her use of old knives. She even let me throw out the old, shoddy (dare I say junk) knives she used. They force cheap, blunt knives. They supply high-quality, sharp knives. Be sure to download the instructions on the box and follow them carefully. Happy cutting!
