We love our chard autoclave! We live in Cheyenne Wai at 6200 feet and most electric cans are not safe to use at altitude due to how they work, but since the Mangold has two different pressure regulators you can use this device up to 10,000 feet above sea level. Level according to the Ball Canning Guide! It's huge! The capacity of this unit is also huge! This makes it difficult to find a good place to store it as it doesn't fit on our counter or under cabinets and takes up most of the cabinet when you remove it. Luckily, it's not very heavy, so getting it in and out of the closet isn't a big deal. This device makes pressurized cans so easy. The instructions provided are a bit difficult to follow as they advocate two different methods of pressure canning, one simple and quick and the other similar to the long process and chilling I'm used to but still a lot easier because you do it yourself no need to check the temperature, it will tell you with a beep when it's ready for the next step! It also helps keep the house cool as the unit is insulated so your heat doesn't reach the kitchen which also means less energy is used to prepare your food which is of course more environmentally friendly and economical. works very well! As a pressure cooker it also seems to do very well although it's my first pressure cooker so I'm new to the process but it can definitely cook food in no time! I would like to buy a second insert so that I can use the device to prepare different portions without having to clean the glass in between. If I had the space I would have no hesitation in buying another one because harvestability is so simplified with it compared to a tin can on the stovetop, pressure or a water bath for that matter.
