Ideal for 750ml or less. Large pots require a lot of practice.

Chemex coffee is fantastic when you want a clean cup with crisp nuances, especially for light to medium roasts. Personally, I prefer the richer feel and flavor of a dip method like a French Press, a Smart Drip (my favorite), or an Aeropress. . However, in my experience, Chemex is terrible for large batch brewing. Brewing time depends on the size of the brew and using the standard coffee to water ratio of 60 grams per liter gives you 7-9 minutes compared to extracted brews when trying to brew the full power of a model with 10 cups (1.5 liters). Yes you can increase the grind, use a fine sieve to filter out fine particles and lower the temperature of the water, but in my experience if you are trying to brew a full capacity 10 cup 1.5 liter model , you will end up with a coarse coffee. As far as making 750ml or less, Chemex is the best cast I've ever had. And it's nice to look at too. But the last thing you want is to invite a group of friends over to surprise you with their delicious coffee, only to brew a sour batch on 1 out of 3 tries. Here's a recipe for making 1.25 liters instead of the full 1.5. I find brewing the full 1.5 liters incredibly inconsistent but decent. Recipe for 10 cups of Chemex * 75 grams of ground coffee, how much can a grinder (like a french press or coffee grinder) spend for 1.25 liters of water (just add extra water to get 1500 if you have a large group of people who don't like strong coffee [grab the first strong cups for those who like real coffee, then add 125 grams of water to get 1500]) * Sift the ground coffee in a fine sieve to get fine Remove particles: Caution! If fines continue to fall out, continue sieving.* Use water below 200F* Make sure not to drop the filter down the sink as this will stop the flow and result in long brew times. Lift and rotate it a few degrees to fix this problem. Of course, the 3 plus side of the Chemex filter should face the spout first to create stiffness and prevent breakage. This should give a steeping time of around 4-4.5 minutes and should not be bitter.
