Because I love to cook sous vide, I was looking for a rack for my 12 liter Cambro cookware. I have solid granite countertops, but the thought of cooking directly on a stone surface for a long time made me uncomfortable. I love long cooking times (sometimes up to 48 hours) and don't want to risk weakening my granite. This is something owners of quartz countertops should also be aware of because of their resin base. I didn't want to use a metal stand - although there are a few nice ones I considered - but I wanted something that wouldn't transfer heat as easily. I chose this particular piece because I felt it was thick enough to retain heat. off my countertop while still giving me a stable enough surface for the Cambro to fit on. And I was right. Surprisingly easy to set up and easy to wash. I have already used it for my "famous" 48 hour Chaka Sous Vide roast and even after such a long time I could not detect any significant heat on the countertop. I've only had it a few weeks so can't comment on durability but so far so good. Because the price was great, if it lasts for at least a YEAR, I'll be happy!
