When brewing tea the standard Western way (one teaspoon per cup plus one per kettle) it's nice to be able to easily remove the infuser from the kettle when the tea is boiling perfectly. This teapot pretty much makes three cups of tea. Incidentally, the best way to measure tea is on a kitchen scale: 3 grams of tea per 8 ounces of water β or 9 grams for this teapot. This works better than measuring by volume, as some high-quality teas have large leaves that don't fit in a teaspoon, or are rolled tightly so you end up with too much per spoon. So, three steps to excellent tea with this teapot: (1) Measure 9 grams of tea into a strainer. (2) Measure the temperature of the water before pouring it on the leaves; The ideal temperature depends on the particular type of tea, but for black tea it is usually >200F or at full boiling point; for green tea you need water at 160-175F; Oolongs typically require around 180F. Fill the kettle to capacity. (3) Let steep for the recommended time, usually three minutes, then stop the brewing process by removing the wire screen. If you start with good tea and follow these instructions, you'll end up with three cups of excellent tea. .
