
I used this counter for the first time just last night. The first launch leaves me quite impressed. I use it at 8.5 pounds. roast pork atm. The N20X size is perfect for this. I first ran sous vide without a rack to see how it would work without it. Butt roasts are notorious for puffing up a bit once they start cooking, and this was no exception. As you can see from my previous photo, the roast is definitely swimming. After using the stance you can see that it has sunk below the waterline. Eureka! So much less of an issue than usual. The only thing I'm taking off a star for is the anti-slip bars that snap into place at the top. While it currently works and keeps the roast from bubbling, it doesn't snap into place very firmly. Over time I could see where it might not hold up very well. I want it to snap more than a very short tongue sliding into a slightly enlarged hole. Time will tell how durable it will be. I plan to update later as it holds up. Overall I feel like quality materials and for the most part quality workmanship. It definitely makes an evening sous vide a lot less of a hassle.
