I bought the vegan kit and the dairy kit and am really excited to try both. First off, it's hard to find artisan vegan cheeses and not all vegan cheeses are winners, so I'm optimistic about this set simply because it's so comprehensive. Includes as much as all the tools and a recipe book on how to make cheese AND what to do with cheese! The only thing YOU as a cheese maker need to provide is almond milk and cashews or macadamia nuts. Plus, the packaging is recyclable, which is even cooler! There was so much I didn't know about vegan cheese that I can't wait to see exactly how it's made. Edit: Finally made vegan ricotta and it definitely lasts! Just make sure you plan ahead, as you'll need to soak or cook the nuts overnight before using them. Definitely a fun activity with a great payoff!
