Ideal size for salting half a salmon fillet or about 6 smoked chicken thighs. I also use them to freeze pre-pressed burgers for my daughters so they don't have to get their hands dirty forming their own. No, turkey won't do, and neither will a whole brisket. If you're wondering if they're food safe, I think so, but I don't know and I don't care. Heck, tar and other substances from the smoking process will most likely kill you first. We all have to go at some point.
