I've always wanted my kitchen knives to be SHARP. A whetstone only improves it, while a Japanese waterstone takes months or years of practice. I bought a Lansky system a few years ago and it works great, but it takes time to set up and is really better for shorter knives. Once you insert a long kitchen knife in there, you really have to move the knife into the clamp a few times to maintain the angle. In short, my knives cut, but not very well. Then I started watching YouTube videos about knife sharpening and Spyderco kept popping up and looking more and more like what I needed. Sure, there were $$$ systems that were good enough to get me started knife sharpening (which I still enjoy doing), but I needed those damn kitchen knives. So I ordered a Spyderco system last week and it arrived this morning. I am writing this review in two hours. The product is just fantastic. In just a few minutes, my relatively cheap chef's knife cut through the paper and shaved the hair off my arm, just like in the video. It hasn't been that hot in a long time. So I pulled out a much better Chicago Cutlery chef's knife with the same result. Then a cheap paring knife, two serrated knives, my Swiss Army knife, and a Leatherman tool. Now I'm out of knives and have to wait to get to our country house to sharpen them. Granted I'm new to this system and I'm sure I'll get more confident and accurate with practice, but if I never get better results than this morning I'd be thrilled. Nut and Bolt Parts (in no particular order): 1. Take your time and hold the blade at a 90 degree angle by pulling back and down. I noticed that after the first few hits you can HEAR it as it does its job. If the knife just slips off, especially on brown stones, slightly adjust the angle.2. This system is not designed to restore a badly sharpened or damaged blade. Even brown stones - the "rough" surface - are very smooth to the touch. If the blade is damaged, take it to a professional and have it re-sharpened before messing with it.3. There has been a lot of talk in this review about getting the knife "razor sharp". Do you shave with kitchen knives or do you chop cabbage? Yes, I suppose if you're a fanatic you could get ultra-thin rocks and go for an actual razor blade, but if your goal is to cut veggies, meat, and twine, you're going to have more sharpness than you have . ever needed.4. Be careful with stones. Yes they are harder than metal for sharpening but they are ceramic. Throw them and they will break.5. Happy sharpening!
