This pan makes perfect popovers. I used the King Arthur Flour recipe, not the potted one. The recipes weren't much different and I would have felt comfortable either way. I brushed the indentations for the pan with melted butter and then dusted them with flour. It was a bit of a hassle, but the popovers came out easily after baking. Next time I'll try a flour spray. The frying pan was easy to clean but a bit awkward because of the small indentations. Not unexpected. I look forward to trying the chocolate bouchon in this pan! Excellent product of excellent quality.
