Wonderful first run - Supressata Jerky

. Unit has the stainless steel wire bowls I wanted (no food contact plastic). Preparation before first use: 1) Soak the wire splints in hot soapy water for about 15 minutes and rinse with hot water. 2) Wipe the inside of the dryer with warm water. 3) Let it run at maximum temperature (158F) for 1 hour. There was no plastic smell during the 1 hour dry run. The unit was then used in one run (8 hours, time 158F) to dehydrate 8.0 pounds of meat soup (soppressata) to make just under 4 pounds of cured soup (that's sooooo delicious!). Read about capacity: Total drying area is 6.5 square feet (1,083 square feet per 12" x 13" tray). Approximately 1.33 pounds of rolled out rectangular meatloaf (1/4 inch thick) is placed on each tray. The meat can be placed at the very edge of the pallet; meat near the rim does NOT come in contact with the sides or rails of the tray as each tray goes in the dryer (i.e. no mess!) Shop (Smart soup noses were grateful) All in all I'm very happy with the shop with a great smell ( the smell dissipates quickly after turning off the dryer) I recommend the Magic Mill Pro food dehydrator with stainless steel wire baskets!
