After trying 2 black 7 watts I found that they were low on power and couldn't get my kombucha's temperature anywhere near to the level I needed. So I ordered one of the blue 25 watts and found it worked much better for me, increasing the temperature from 70 to 82 in 1 and 2 gallon batches. I found the taste a bit sharper, a bit more sour. I love it when it brews that hot, so I bought a temperature-controlled outlet (Propagate Pro Heat Pad Thermostat - $23), attached the sensor to the glass with a rubber band so it was in contact with the glass, and set it up 75th grade which turned out much better with a smoother taste which I prefer. So Blue 25w worked best for me. and with a thermostat controlled output, I can dial in the exact temperature I want without worrying about the possibility of overheating. and heat it up right where I want it, knowing my book will always be perfect.
