Not quite sure what to do with the water other than to cool oil in warm conditions. Since I live in the Pacific Northwest rainforest, that's not a problem. I tried water but didn't like the wet oil and the little drips dripping from the jug threatening the food so I'll toss caution and moisture to the wind and throw that part away. It is also recommended to change the water every two to three days. The? Who doesn't forget? Not mine. The device holds about a pack of oil at a time, and the seller warns about adding fresh oil to the rest, so you'll have to use up what's available. There isn't a big one. Having to hold the oil cap in one hand while taking out what you need and putting it on the receiver is an operational flaw they didn't fully realize. Try buttering the toast with one hand. Okay, it can be done, but not without additional steps and maneuvers. Actually a bit annoying. You also can't appreciate a tablespoon-sized serving from its cylindrical jug like you can from a stationary stick on a tray. So try not to get too frustrated with the recipes. Easily customize. In the era of an infantile, dangerous president, and with the ravages of our record-breaking pandemic (I'm number one on Facebook! Space Force! Superduper missiles!), these are first-world issues and shouldn't escalate to usual levels. by the reviewer's outrage and despair and hysterical DO NOT BUY! a warning that our overbearing consumer saviors like to charge ignorant morons of us. Where this sleek little hot rod really shines is in design and efficiency. It occupies a small footprint, doesn't look like an oil pan or display its messy contents like a jar lid, and comes in several beautiful decorative colors. Even if you're anointing the skin of a large bird, it's very convenient to be able to hold, anoint, and maneuver around your sacrificial bird. Or a foreign partner. Solid 4 stars with no regrets. Help me Batman.
