Compared To High End Japanese Knives - Sharp Is As Sharp Does

I have a set of high end Japanese knives made not at a factory, but by an artisan and his apprentice in the Japanese countryside. One knife from that set costs more than the entire Ninja NeverDull 15 piece ensemble.While the Ninja knives have very good build quality, the Kurosaki knives are in a different league and look far more impressive. They are works of art, while the Ninja are more of a factory produced utilitarian offering, but still attractive in its own way.How does the sharpness compare? Here’s where it gets interesting. The Ninja knives are every bit as sharp. Both are like razors. It seems sharp is sharp, that there’s a ceiling to how sharp something can be.The Japanese knives are made of SG2 (high carbon, high alloy) steel which is very hard and holds an edge longer. At the same time, that hard steel makes them more difficult to sharpen. I ship them off once a year to be professionally sharpened at around $50 per knife round trip.The Ninja knives are made of softer German Steel. While they don’t hold an edge as long as SG2, they are easier to sharpen and more difficult to damage. The built in Ninja sharpener works very well. The knife locks into place and you run the sharpener back and forth 10 times. The results are a very sharp knife, and much easier and less expensive than professional sharpening.The Ninja NeverDull set offers a remarkable value. You get 15 pieces for less than the price of one high end Japanese knife. And with an effective, easy to use sharpening system built in. I wish they had included a honing rod as well. Sharpening removes metal, while a honing rod sharpens the existing edge, which extends longevity.So what do I really think? The Ninja NeverDull set is a genuinely excellent kitchen knife system. These days I have my fancy knives on display because they look so stunning, but when it comes time to cook, I find myself reaching for the Ninja because they work great and I don’t have to worry about accidentally damaging them.Highly recommended.I trust this review was helpful.
