I use it to cut vegetables like cucumber, onion and tomato more evenly. With my tomatoes, I learned from the Japanese how to cut tomatoes from the side of the stone where it joins the stalk. Instead of cutting the stem in a circle, I remove it in a V-shape after slicing the tomato. Often depending on how thick I cut the core into several slices. Many tomatoes have a large core. This method saves more tomatoes. I even use it to cut meat to bite size.
