SCAA recommended temperature and pre-brewing

I'm a good coffee lover; I've been roasting beans myself since the 1990's, have a Pasquini Livia 90 and a Rocky Rancilio for espresso, a couple of presses and a Chemex for infusion. On weekday mornings when we need to get out the door I used the Capresso MT-500 which was on its last legs. I decided another automatic drip was in order. I've reviewed all of the current high end coffee makers but insisted on something with a thermograph, 200 degree brew temp, pre infuse, brewed over 40 ounces of coffee and brewed at the push of a button as my wife doesn't like messing around with coffee makers. My research led me to this car. I also looked at Technivorm, Brazen, Cuisinart, Capresso, Breville and Bonavita. I've had Zojirushi for a week now. So far it's been excellent. I measure the temperature in the carafe at 188 degrees and in the ground coffee layer at 200-202 degrees and the coffee tastes great. I brew on the "time saver" option and a full 50 ounce can takes about 9-10 minutes to brew. Coffee is extracted very well, without excessive bitterness. I typically roast to Full City or Medium (10-15 seconds after the second crack begins) to avoid roasting all of the varietal character of the coffee. The carafe keeps the coffee hot for at least four hours; We always drank coffee at this point. It uses an 8-12 cup cone basket and I use Melitta filters instead of the permanent filter that came with it. My wife doesn't like small particles/sludge in her coffee. I was particularly impressed by the large shower head, which gives a great, even infusion onto the coffee grounds. Cleaning is easy as the filter basket and water tank are raised for cleaning and filling. It's well made and doesn't look flimsy. So far he looks like a winner. I will update this review as needed.
