I bought this pan because its surface is not acid responsive and is not prone to surface cuts like a nonstick coating. This pan conducts heat well and you don't have to worry about sudden temperature changes like with tempered glass pans. The pie dough will be a little sticky, but it's not critical. Adhering parts can be easily washed off with a little soaking. I love how deep the pan is and the 8.5 inch interior is actually a plus for ensuring there is always plenty of overhang. My first blueberry pie turned out pretty good. I'm buying a second one as a spare tool for blind baking.
