I love to salt and smoke meats - corned beef, pastrami, pork belly (for homemade bacon) etc etc. I used to use large plastic containers for this purpose which take but take up a lot of fridge space and are bulky. None of the tubs I've found have a super positive lid that is airtight. It sucks because you want to turn/shake the meat in the brine quite a bit. Instead, I can make my seasoned brine in one of these bags, toss in the meat, let out all the air, and leave just enough room to tie a nice knot, effectively sealing the entire composition. This allows for more efficient storage of meat in the refrigerator. Every few days I can take the bag out of the fridge and massage/knead the bag to fluff up the brine. The system works great. I wish these bags were a little cheaper - and I suppose I could reuse them, but haven't done so yet. However, this is a good solution for the job.
