Just an upgrade. This pressure cooker is perfect for many tasks! In addition, it proved to be outstanding in terms of quality and performance. In fact it is so superb that we bought a 6 liter match with the same lid, gaskets, seals etc. Also, the glass lid available from Presto is perfect for both, as is the variable pressure regulator sold from Revain. I have been cooking with a pressure cooker/pot (Mirro/Presto/American) for over 50 years and this pair of stainless steel (4 and 6 liter stainless steel) is the best upgrade for this style of cooking that I have seen. This includes $200 worth of European jewels! I had serious doubts after reading some of the nonsense posted by people who are either paid to spoil food or just don't understand what's going on with pressure cookers. It seems that these pressure cookers are actually 18 years old. /10 stainless steel! This is close to surgical steel and both plates we received are of this quality. The (locking mechanism) should be (an attorney device) and I don't think it's needed. However, I have ordered two replacement gaskets and keep the cylinder, gasket and seat absolutely clean and NO PROBLEM! The "rusty screws" mentioned in some negative reviews may become a reality for us, but not yet. I believe the screws we received are stainless steel, they will not rust, BUT THE LOCK WASHER may not be rustproof and may need to be replaced! I thoroughly clean the top of my pressure cookers. immediately after use. I DON'T WASH THEM IN THE DISHWASHER! I carefully clean the rubber seal and its seat. I wipe down the locking mechanism very carefully, being careful not to get food debris stuck to the seal, seat, or sliding cylinder. I think putting these vertices in the dishwasher might cause problems for some people. Dry running can easily cause damage if you blast the heating coil directly onto either the retainer seal or the main seal. Incidentally, this abuse can cause the lock washers to rust, if that really is the problem. If you are unfamiliar with pressure cookers, please read this: Pressure selection options are important when you use your pressure cooker for many, many uses! For example I cook rice at 5psi for 8 minutes, I find it much better than 15psi! It is imperative that you learn to "talk" about the potty! After pouring enough liquid into a saucepan, no less than enough to cover the bottom 1/8 inch deep if using only water and 2 inches deep if using thicker liquids, you should heat the liquid a bit and THEN ROTATE THE BURNER SUITABLE FOR DOWN. TOP WITH WIDE OPENING! Then you have to wait a little and see how the locking mechanism works! If excessive steam comes out and the seal doesn't shrink, don't panic, just touch the top of the valve with the handle of a spoon and it will shrink, it's happened to me once in over a hundred uses! Now that the seal is in place, the "Jiggler" will soon start swinging and "talking"! You have to be patient and gradually decrease the very hot burner until the manipulator starts to wobble without further adjustments. If you don't lower the burner temperature, you may very well end up with an "episode" similar to that described by people who blame the furnace. It's the dialed pressure, determined by the gently rocking "stir" that sets the internal temperature of this pressure cooker. THE BURNER IS ONLY USED FOR PRESSURE REGULATION! So if your burner temperature is too high and you exit the cooker, it can run out of liquid, in which case a lot of nasty things can happen. None of this is life-threatening, but deformed pots, burst high-pressure valves, burnt gaskets, etc. can and will happen with such carelessness. I loved these two plates. Gaskets seal quickly and easily, before installation I moisten mine with a little water. The shape of the sealing rim on the pan has been redesigned, the surface is slightly rounded, the lid fits well and the SEAL WILL NEVER LEAK! In fact, the design of the seal has been changed and when the pressure in the tank increases, the rubber seal that promotes sealing expands slightly. A significant update in my opinion! Okay, there's a lot more to say, but I doubt many people want to hear more if that's the case! I have thoroughly tested this herd, I do not work for Presto and do not receive any compensation from anyone for writing this review. I believe that when properly maintained and operated correctly these cookers are absolutely amazing for what they were designed to do! Enough said!
