excellent for bulk fermentation of bread dough.

is used for mass proofing of bread dough. provided it easily holds 8 pounds of dough with the ability to rise. very smooth surface, perfect for dough. Doesn't stick at all, doesn't even need to be lubricated. It's plastic so be careful with the tools inside if you want a super smooth finish that will last. Fits almost perfectly in the brod and taylor proofer.
