Mini Yorkshire Pudding!

Ok, this worked great for mini Yorkshire puddings (beef/salt and pepper flavored popover that doesn't actually contain pudding). (Popover has butter but this one doesn't) This is a traditional bread served with beef (like roast ribs). I tested several pours in this pan and found that 20ml of batter (1 tablespoon plus a teaspoon) was perfect. for Yorkshire pudding. Lubricate with beef tallow if you like, but when I first started cooking (I needed 60) I just used a spray oil (Pam). I live in the US, but I still weigh ingredients accurately. Many people say that you need to preheat the pan and pour the batter into the sizzling oil at the bottom of the cup. You don't need much with this pan. Here is the recipe I used: INGREDIENTS: 280g flour, 8 large eggs, 416g milk, 1% or 2% salt, black pepper, spray, oil METHOD 1. Heat oven to 400F. Spray the mini popover mold with spray oil.2. For the batter, place the flour in a bowl and beat the eggs until smooth (a whisk works great). Gradually add the milk and continue beating until the mixture is no longer lumpy. Season with salt and pepper. Refrigerate batter for 10 minutes and refrigerate between pouring/baking cycles. .3. Pour 20ml of batter into each well. Place the baking sheet in the oven and let rest for 20-22 minutes until the puddings are risen and browned. Remove from the oven, invert onto a cooling rack and repeat until all of the batter is used.
