I've now tried 3 different brands of protein pancake mixes and ended up going back to AboutTime. The first ingredient listed is protein, not flour. For me, this makes the nutritional content a little better than others I've tried, but you'll have to play around with the listed mix recipe to get the texture you want. In my case, I use the batter in a waffle iron, so it needs to be a bit thicker. I usually add 1-2 eggs to a recipe and the texture holds up great. The maple syrup flavor is present but not overpowering. Price and amount of protein per ounce, this was a winner among all others.
