This item is pricey, but it's the only induction burner I've found that offers enough control to adjust the cooking to the level you want. For example, when I cook oatmeal (30 minutes), I don't have to constantly stand over the pot and adjust the induction power. I can go and feel safe because I won't find a mess when I come back to interfere. However, I have another commercial induction burner that has 100 levels (say 10F per level) that is great for anything that doesn't require such precise temperature control. So I have a Breville torch and several other induction torches for less demanding applications. Breville can simmer to perfection (and everything else), a 100-step unit can remain stable, and even the less expensive ones are best for non-critical general cooking.
