There is a better knife out there

KC-101 is actually better than this KC-401 (and cheaper) I bought this as my first Chinese cleaver because I chop vegetables every day. When I received it and started using it I was surprised that I had straight cut problems. For example, when trying to cut a thin transverse slice of daikon, the knife inevitably swerved sideways, giving me an uneven or incomplete slice. I thought maybe this is my technique since the handle is a lot farther from the edge of the blade than on the knives I'm used to. After trying many times with no improvement, I finally bought a Winco KC-101 and suddenly I could make fine straight cuts again. Maybe the 101 needs more maintenance to keep the blade in good condition, but I know how to sharpen and sharpen knives so that's not a problem for me. Even when I wasn't using this slicer knife it was still useful as a scraper, for example if I was chopping up some onions (with a good santoku) I could use this knife to add them to the pan all at once.
