i really like it in containers

I use it for the first time for lacto fermentation of vegetables from the garden. I pureed tatsoi cruciferous vegetables with salt (3 tablespoons per 5 pounds as recommended by wildfermentation.com, so only about 1-1/2 teaspoons for the amount that fits in this tsukemono press). I tried it and it seemed too salty to me so I added MORE greens, I had to lower the lid hard but it caught and held. Anyway the greens have produced enough liquid to cover them and the spring in this press keeps the greens under the liquid and when I tilt the press the green liquid spills out from under the lid which means gases can escape. Ideal. For the amount of lacto fermented veggies me and MAYBE my husband can eat this is a good size. And inexpensive.
