Good weight and surface
Used once so far and does what it's supposed to. We'll see how it holds up with repeated use, but I'm optimistic. The rolling surface is consistent and the weight seems fairly even. Even if you don't use spacers and roll/feel/feel by hand, the thickness won't be distorted (again, not yet).
- Constant dough height: 4 removable and adjustable discs on each side raise and lower the rolling surface to ensure even baking; Discs are 0.375" or 10mm, 0.25" or 6mm, 0.125" or 3mm and 0.063" or 1.5mm so you can choose which disc is right for your test; remove all washers and back to standard rolling pin straight
