Very easy to use with power tools and hand tools

After trying other sharpening products with little or no results, I purchased this Chef's Choice 1500 knife sharpener. Within half an hour (including reading instructions from cover to cover) I sharpened all eight of my Wüsthof knives. It was ridiculously easy. The first set of slots is for thinner Japanese knives. The second set of slots is for American slots. and European knives. The last set is for sharpening and polishing. You can't go wrong as the slots are marked on the sharpener showing which set of slots to use. You can even change the angle of your American and European knives to match the thinness (and sharpness of Japanese knives, if you like). It may be a bit more expensive than other brands of knives, but I've learned the hard way never to skimp on tools. I've spent over a hundred dollars on lower quality pencil sharpeners in the past. It works and only pays off at the expense of professional knife sharpening. If you're a serious cook, you know the value of a sharp knife. Value.
