The right equipment is everything.
The blade is TAAAAO sharp! I used a home food processor in my restaurant and forgot how cool and quiet the robotic coupe is. This is how pesto, aioli, vegetable puree and grated cheese curds succeed quickly. The price was great too. Cheaper than the restaurant supply store I usually shop at.
