Perfect poached eggs
I read about using a "Chinese" colander to whip poached eggs. I've had a lot of success with the classic strudel method, but sometimes I end up with an "egg drop soup". I never knew that part of the protein in some eggs has low viscosity. gently in my pan. Eggs poached PERFECTLY every time and peeled quickly.
