In my home country (Brazil), fried groats (cupim) is a much-appreciated delicacy served in grill restaurants (churrascarias). This cellophane wrap is used by professionals to prepare the softest, most tender and delicious rump steak. The meat is seasoned with rock salt, wrapped in food cellophane and cooked over charcoal for several hours. Upon testing, I found that this cellophane roll contains FDA approved food grade cellophane that is perfect for grilling. However, there is a caveat. Watch the temperature carefully. It doesn't tolerate more than 400º F or maybe a little higher. Don't hold it directly over an open fire, otherwise you'll melt the cellophane and spoil the meat. It is designed to preserve meat juices during slow cooking. You can then remove the plastic and bring some of the outside crispiness to the roast.
