These were used to make Danish braids filled with large fruit and biscuits. The pans are large enough to accommodate my silicone baking mats with a slight raise around the edges to keep {most} spills in the main pan. The pans are easy to clean and will definitely keep their shine. Grates are invaluable in allowing the biscuits to cool and possibly dry out a bit and the Danes definitely benefited from the grates allowing the soil to dry out a bit. Sometimes it's the texture of the crust that makes or breaks the dish.
