Exceptional Knife and Chisel Sharpening System

I got a lot more from this sharpening set than I expected. First, the box is made of thick, precision plastic, not cardboard. on top there is only a cardboard sleeve, and when you tear it off, the quality shows in every way. The instructions are clear, detailed and written in plain English - not a bad translation to leave the user scratching their head! The double-sided water stone is not only colour-coded, but also very clearly marked on the side (3000 or 8000 grit). There is a molded urethane cover that supports each side of the bricks, preventing chipping and providing an incredibly comfortable, non-slip surface when used on a workbench or countertop. That way you can remove the sleeve from the side you're using and leave the other and it won't budge an inch. Of course, you should remove both sleeves to soak the stones with a tap for ten minutes first. Water. I used a loaf pan from the kitchen, although it looks like you could use the plastic box they came in. I don't think that will give you enough reservoir, but the body shape has a fairly high lip. theoretically you could submerge the water stone as intended. The idea is to soak the stones until no more tiny bubbles come out. In real life, the stones are so well made and dense that there is hardly any bubbles on first use, which is much better than the water stones I've bought in Japan before. (I should note that although the name sounds like a Japanese set, and these are Japanese-style water stones, they are made in China. The factory must be really good at quality control!) Misen knives that Always been the sharpest I've ever used, but now. oh my god i used surgical scalpels which are not that sharp! And then I went to my shop and shared the real reason I bought this set: I have a heavy vintage plane with a 2 1/2 inch blade. And to my surprise, this set of stones was wide enough to sharpen a blade. After sharpening, the coarse, inch-long curls that used to separate from the Honduran mahogany I was straightening now turned into glossy, gauzy curls six feet thick. I have never worked with the finest hand plane iron. And my carpenter's chisels quickly got a lot better too. And here's the bonus of this set! There are two things at the bottom of the tray that I didn't expect. One is the dressing block which appears to be ceramic and I assume I can use it to level the stone after heavy use, which is better than the silicon carbide paper on glass I usually use. The other turns out to be a knife holder that's spring-loaded on the spines of my knives. The surface of the knife holder looks like ceramic or extremely hard white plastic rods that slide over the water stones and hold the knives at a constant angle. I pride myself on being good at sharpening my hands, but appreciate a clean and simple device to make things more consistent. Did I make it clear that I like this set? One of the best accessories in my workshop, even if it's for the kitchen.
