I bought this to improve my sous vide setup as my small butane torch just wasn't producing the heat I wanted. If the butane wasn't hot enough, it will get too hot. My previous attempts at roasting have had mixed results and usually resulted in a bit of flavor being added as the edges, corners and any wood chips burned slightly crispy. Simply salting before frying or carefully removing any herbs (or tying up herbs to remove later) is an absolute must! Knowing how to keep the flame moving, being patient, keeping the flame on, and moving slowly will definitely help you achieve a more even burn and less burnout. Overall I find the burner does what I expected it to do, but I didn't expect the steep learning curve with use.
