What is this product all about?

Not only is the price of this product ridiculous and seems to keep going up, but unfortunately on this last order I received the jars are only 3/4 full - how is that possible, especially given the price increase? Unfortunately, I have a cat that is on a special diet and that's all she's eating at the moment, but I'm actively looking for an alternative every day because it's annoying!
