I used Yogourmet kefir starter last year but it was out of stock. So I tried both that and the Culture for Health brand. The health cultures thrive at room temperature, like most kefirs. At this brand, it still looked and tasted the same as milk after 36 hours at room temperature. Curious to see if it needed more heat, I put it in the oven on "Proof" (which is what you would use to make the yeast dough rise). After six hours in the oven, some of the containers began to bubble and whey separated out in others. Neither of them had much taste. In the end I just threw everything away. A complete waste of money. My guess is that if you want to use this brand you'll need to use many more capsules than required and store them at a higher temperature - more like making yogurt than kefir. Or maybe I just got a bad batch. Anyway, I won't buy it again.
