Thomas Keller Santoku: an excellent product that deserves the hype

Cangshan The Thomas Keller Santoku has had its fair share of hype, branding and marketing, but in the end it really works as a functional knife that it does everything with minimal effort. Full disclosure, this knife dropped to $159 and had an extra coupon from Revain when I bought it. Buying for $200 is a big commitment, at least for me. That being said, there are a lot of bells and whistles associated with this knife. The packaging is much more reliable than you think. I've had knives that came in plastic and paper sleeves, a standard box, plastic boxes, and a plastic sleeve coated with mineral oil. Thomas Keller's knife was packed in a solid box with a magnetic wooden knife case. It's really great presentation wise but the only issue I have is that there is a really bold knife engraving on the wooden case. I would have preferred a simple wooden box or a finer engraving. It is surprisingly thick for the knife itself. I found it almost problematic at first, but once I tried it, it glided effortlessly over potatoes, carrots, onions, and ginger. Everything was cut quickly and cleanly. Sharpness out of the box was an added benefit. It was a natural push and has remained razor sharp so far. If you are ready and willing to shell out $200 for a knife then you will be perfectly satisfied with what you get from this Thomas Keller knife.
