It's hard for me to put my finger on it as this blade is as sharp as it gets and the handle fits my hand perfectly. I don't know what else to say. It cuts through anything and everything from soft tomatoes to the bone. I even fillet salmon with it.

My husband uses this knife and says it is one of the best knives he has ever used. He asked to buy the whole set. This is a very sharp knife, easy to use, and the handle has a great design, easy to hold, non-slip and prevent blood from getting on your hands. I would definitely recommend these knives to friends and family.

For slicing brisket, steaks etc. Mainly used for meat. The knife cut well and stayed sharp, but spots appeared all over the body. This may or may not be normal for this steel, but I have other knives and this hasn't happened to any of them. Hand washed at dawn and treated like my other knives.

The design of this knife is the only reason I bought it. Mind you, it's only $22, so poor quality steel (very low), poor workmanship, but great design. The handle should be a color other than white to give more contrast to the blade. I wish Dexter would make a deluxe version of this model with a wooden handle and high quality steel. I would pay up to $100 for this design.

Great knife! Arrived super sharp and ready to cut. The non-slip grip is essential when your hands are bleeding and you're cutting multiple pieces of meat. Easy to clean as there are no crevices or grooves for bacteria to grow. I bought this knife to replace one that had been around since the late 80's. Almost indestructible! My old one has been sharpened too many times in the last 30 years and I decided it was time to get another one.

The only criticism is that it has a unique shape and no sheath - which is a shame as the knife is solid. I bought it for grilling, specifically for the breast. Two knives are generally needed for such meat, one for slicing and one for slicing. The unique profile at the top allows me to fit in hard-to-reach places, but it's also thin enough to trim the chest well. Four stars for that alone.
