Professional Chef Review

Extremely sharp with barely visible sharpening lines. It is also very light and slightly unbalanced due to the handle material. I'm going to replace the handle with a homemade hickory handle and turn it into a $100 knife. I've sliced strawberries, grapes, kiwis, bananas, apples, potatoes, mangoes, tomatoes, limes, lemons, and a few other foods with no blade resistance, mostly using "grandma's cut".

The hollow grind is a bit annoying but a decent knife

This knife is really good, especially for the price but I wish they had done something other than the hollow grind for the secondary bevel. This increases resistance when trying to cut through something. Imagine slicing strawberries over a bowl or whatever. Slight irritation. I bought this as something inexpensive to throw in a camping kitchen set so it's not really a problem. At first I used gray and green compounds along with bare skin and after a bit of testing in the kitchen I think this…

Cool little Japanese style chef's knife. 👍🏼🍐

This is not a "thick" knife. This is normal as this is not a survival knife. This is a good Japanese style chef knife. I love how traditional Japanese blades like this have the scabbard almost entirely integrated into the handle, you know? It has a name that escapes me at the moment.
