I use my desktop rotary paper/photo cutter and it creates perfectly sized strips. 1.5 is so versatile that if you're desperate for something deeper you can always use a second strip over the first. Most old DSLRs and rangefinder bodies that I've re-foamed seem to use 1.5mm.

Ideal for attaching the light seals of the old Canonet G-III QL17. I used this 3.0mm for the groove where the tailgate lip slides into the camera body. It took a minute to remove the adhesive for this particular seal and 1.5mm for everything else. Easy to cut with an exacto knife and the glue is very sticky, just lick it off to buy time for placement. This is what you need to fix your old camera!

This rating is based on 1.5mm foam. I couldn't fit 1.5mm thick foam into the side channels of a Canon TX door (35mm film camera from the FD era).
