
I've never had good luck with sharpeners so gave up on them a while ago. But I bought it when my kitchen knives were starting to dull. I checked out the YouTube videos mentioned in the article as well as some other sharpening guides. 15 degree protection works wonders! Without hesitation, he holds the knives at exactly the right angle. I used slow strokes and took my time. My knives are so sharp now it's scary! It's like cutting an onion with a razor! I can cut a wafer-thin tomato on the side (parallel to the cutting board) without touching it. The blade glides over it without resistance. Now I have to be extremely careful. With blades this sharp, there is no room for carelessness. On the other hand, I find the double-sided grain of this stone perfect for kitchen knives. 1000 on one side for rough work and 6000 on the other for razor sharp polishing. I see no reason to ever need other stones. I highly recommend this product. And for the price, it couldn't be better.
