If you're a home cook who hates hands-free sharpening, this sharpening system is for you. It's a little finicky and requires some tightening of the screws to work, but once you get the blocking angle it'll be the tip and sharpen the knife. The key to this is a digital protractor, available for around $20, which allows you to easily and consistently check the angle. The system could definitely be improved with a bit better editing, but other products with the same design cost hundreds, so take your pick. An ideal grinding system that will cost you an arm and a leg, or a similar budget system that requires a little attention to achieve the same goal. I'd love to see better stones offered in the sizes needed for a movement like this, but I'm sure they are out there, you just have to look.
