Extremely accurate. When the entire shaft is in the milk. Otherwise you will get inconsistent temperature readings. I've used this several times just to compare how it feels on my hand. After that I used it as an air temperature sensor in the automotive industry. Which actually works quite well. And since different media do not come into contact with different parts of the shaft (only air comes out of the vents), the readings are accurate. The response time to the pressure gauge is quite good. Since it's not digital, there's obviously a couple of second delay when switching from something hot to cold, but that's nothing to complain about when it's only around $14.
